Fiesta Chicken

This is one of the easiest crockpot recipes yet! You simply put all the ingredients in the slow cooker and let it do it’s magic. We love this recipe! Be sure to Pin it so you can easily find it when you’re ready to give it a try.

INGREDIENTS
• 1.5 to 2 pounds Boneless, Skinless chicken breasts
• ½ White Onion, sliced
• 2 cans Campbell’s Fiesta Nacho Soup (11 ounces each)
• 1 10 oz. can black beans, drained
• 1 10 oz can corn, drained
• 7 ounces Diced Green Chiles (1 can)

MAKE TODAY DIRECTIONS:

  1. Place nacho soup, onions, green chiles, drained corn and beans and raw chicken in the crockpot.
  2. Cook on high for 3 hours or on low for 5 hours.
  3. Serve with a side of Mexican or yellow rice and chips and salsa.

FREEZER PREP DIRECTIONS:

  1. Label a gallon size ziplock bag – Fiesta Chicken. Crockpot on High 3 hours or low 5 hours.
  2. Place nacho soup, onions, green chiles, drained corn and beans and raw chicken in zip lock bag.
  3. The night before serving, remove the bag from the freezer and thaw it overnight in the refrigerator. If you forget to do this, run hot water over the bag to break it into chunks and then add to crockpot.
  4. Serve with a side of Mexican or yellow rice and chips and salsa
