Turkey Tortellini Soup

Ingredients

1 pound leftover cooked turkey, diced in bite size pieces
4 cans of chicken broth or stock (about 8 cups)
4 cloves of garlic
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
2 bay leaves
salt and pepper to taste
1 small bag of frozen mixed vegetables (about 12 oz)
1 small bag of frozen cheese tortellini (about 19 oz)

Instructions

  1. In a large soup pot, pour in the chicken broth and spices and bring to a boil.
  2. Add the tortellini and cook per the package instructions. It’s usually takes just about 3 to 5 minutes to boil.
  3. Meanwhile, steam the bag of frozen mixed veggies in the microwave.
  4. Add the frozen veggies to the stock pot. Remove the bay leaves.
  5. Stir in the leftover turkey. Salt and pepper to your liking.
  6. That’s it. Super easy stove top leftover soup!

Serve it up with crusty, buttered french bread and you’ll have a perfect post-Thanksgiving meal.

This is a super budget friendly meal too. Assuming you have the leftover turkey and basic spices in your pantry already, this meal should just $6.86 to get on the table! All prices are from Walmart online grocery app as of November 2019.
