Ingredients
1 pound leftover cooked turkey, diced in bite size pieces
4 cans of chicken broth or stock (about 8 cups)
4 cloves of garlic
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
2 bay leaves
salt and pepper to taste
1 small bag of frozen mixed vegetables (about 12 oz)
1 small bag of frozen cheese tortellini (about 19 oz)
Instructions
- In a large soup pot, pour in the chicken broth and spices and bring to a boil.
- Add the tortellini and cook per the package instructions. It’s usually takes just about 3 to 5 minutes to boil.
- Meanwhile, steam the bag of frozen mixed veggies in the microwave.
- Add the frozen veggies to the stock pot. Remove the bay leaves.
- Stir in the leftover turkey. Salt and pepper to your liking.
- That’s it. Super easy stove top leftover soup!
Serve it up with crusty, buttered french bread and you’ll have a perfect post-Thanksgiving meal.
