Creole Stew

This hearty meal is perfect for a fall or winter day! It comes together in a snap! Dice up a few vegetables and the sausage, dump the sauce and spices, give it a stir and set the crockpot for 4 to 5 hours and dinner is done!

I love this recipe because it is made with familiar ingredients that I know my kids like and will eat. This recipe is also awesome in that it is budget friendly! This entire recipe comes together for about $12 and makes enough for leftovers!

INGREDIENTS:

1.5 pounds smoked kibolska sausage, sliced
2 cans cream of mushroom soup
1/4 cup of milk
2 tablespooons of Old Bay Seasoning
1 onion, large slices
1.5 pounds red potatoes, cubed
2 cups of baby carrots, sliced in half

MAKE TODAY INSTRUCTIONS:

  1. Dump the two cans of cream of mushroom soup, old bay seasoning and milk into the crockpot and give it a stir.
  2. Dice up your vegetables and slice the sausage.
  3. Put the veggies and sausage in the crockpot and give it a stir.
  4. Cook on high 4-5 hours or until the potatoes and carrots are completely cooked.

FREEZER PREP INSTRUCTIONS:

Unfortunately, I haven’t had much luck with freezing fresh vegetables. They usually turn out with a weird texture. So the way I freezer prep this meal is to simply slice the sausage and freeze it. Then on the morning I intend to prepare I quickly slice, dice and dump the soup, spice, sausage and veggies.
