Mushroom Wine Chicken

Mushroom wine chicken is a delicious restaurant quality main dish recipe! This is one recipe that my mom made a lot when we were growing up. It was on the regular meal rotation as it’s fast, easy and budget friendly. Like salt, a dash of alcohol really brings out the flavor in food. Chicken breasts are naturally lean and packed full of protein and easy to make. This creamy chicken recipe is a simple, comforting dish for everyday or it can be made into an elegant special dinner. It doesn’t call for any gourmet ingredients which is why it is in the budget meal category. It’s slightly sweet tasting which is why my kids love it.


I love that it’s a crockpot dish that’s not a soup or stew. I can quickly prepare a crockpot freezer kit for this recipe on a day when I have time. It’s batch prep day friendly in that it requires no cooking; rather, just pouring some ingredients into a zip lock bag to freeze for later. I love that on a busy day, all I’ve got to do is thaw the kit and dump it in the crockpot and a fabulous dinner awaits when we get home. If you don’t have time for the crockpot, you can easily pour this kit into a casserole dish and bake it in the oven at 400 degrees for about 22-326 minutes (depending on the thickness of the breasts) or until the breast reaches an internal temperature of 165 degrees on a meat thermometer.

I mentioned this is a budget friendly recipe. Based upon Walmart grocery store app prices with no sales or coupons, the cost of this recipe is $10.68. All prices pulled from the Walmart grocery app in November 2019. That means you can feed your entire family for the price of one person eating out! Depending on the size of your family and their appetites, you may even have enough for left overs from this recipe. PRICES: 2 pounds of chicken ($3.56), 2 cans mushroom soup ($1.00), White Cooking Wine ($2.18), 1 package of mushrooms ($1.48), Frozen green beans ($1.34) and Egg Noodles ($1.12).

INGREDIENTS:

1 tablespoon butter
4 chicken breasts (about 2 pounds)
10 1/2 ounces cream of mushroom soup (equivalent of 2 cans)
1 cup white cooking wine
8 ounces of fresh cremini or white button mushrooms, sliced (about 2 1/2 cups) or 2 cans sliced mushrooms
Dash of dried parsley or thyme for garnish

MAKE TODAY INSTRUCTIONS:

  1. Put the soup, wine, mushrooms and butter in the crockpot. Give it a quick stir before putting the chicken in. Gently spoon some sauce over the chicken.
  2. Cook on low for 2.5 hours on high or 4 hours on low, or until the chicken is completely cooked. All crockpots cook differently, so adjust the cooking time as needed.
  3. Plate the chicken, top with the mushrooms and sauce, and garnish with fresh parsley. Serve with a side of egg noddles or rice and a fresh or frozen steamed vegetable.

FREEZER PREP INSTRUCTIONS:

  1. Label a zip lock gallon size bag:

Mushroom Wine Chicken. Crockpot on high 2.5 hours or low 4 hours or until chicken is done.

  1. Dump all of the ingredients into the zip lock bag, lay flat and freeze.
  2. On the night before you plan to prepare the chicken, pull the ziplock bag out of the freezer to thaw in the fridge overnight.
  3. When you’re ready, dump the ziplock bag into the crockpot and let it work its magic! Right before it’s time to eat, boil the egg noodles or steam the white rice per package instructions. Steam a fresh or frozen vegetable in the microwave or stove top.
  4. Plate the chicken, top with the mushrooms and sauce, and garnish with fresh parsley. Serve with a side of egg noddles or rice and a fresh or frozen steamed vegetable.
