Balsamic Chicken (Crockpot)

This is a lovely crockpot dish. It’s full of flavor and something different. I’m always on the lookout for a crockpot dish that’s not a soup or stew. It’s so nice to get home and have the main dish prepared and waiting. All you have to do is quickly whip up a few side dishes and dinner is served.

Easy Crockpot Dinner

Another thing that I love about this meal is how budget friendly it is. I pulled all prices off of the Walmart Grocery App as of November 2019. You can make this entire dinner with sides for $7.30, assuming you have some of the basic spices and staples in your pantry. This means you can have this entire dinner on the table for less than the cost of one fast food meal for one person. Healthier, cheaper, and better tasting too!

PRICES:

2 pounds boneless, skinless chicken breasts ($3.56)
1 onion, sliced ($.78)
1 14.5 oz can of diced tomatoes, drained ($.46)
½ cup chicken broth ($.50)
Rice A Roni Wild Rice ($1.00)
Broccoli ($1.00)

So to make the main dish, you need the ingredients below:

INGREDIENTS:

2 pounds boneless, skinless chicken breasts
2 teaspoons Italian Seasoning
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 onion, sliced
1 14.5 oz can diced tomatoes, drained
½ cup balsamic vinegar
½ cup chicken broth

MAKE TODAY INSTRUCTIONS:

  1. Pour the chicken broth, balsalmic vinegar, diced tomatoes, and drained tomatoes into the crockpot.
  2. Add the spices and stir.
  3. Add the onions to the bottom of the crockpot and place the chicken on top.
  4. Cover and cook on low for 4-5 hours or high for 2 1/2 to 3 hours. Note, cook time varies per crockpot, so cook until the chicken is done. Right before dinner time, just quickly whip up a few sides such as wild rice and a steamed vegetable and a fabulous dinner will be served.

FREEZER PREP INSTRUCTIONS:

  1. Label freezer ziplock bag – Balsamic Chicken – Crockpot 4-5 hours on low or 2 1/2 to 3 hours on high.
  2. Dump all of the ingredients into the ziplock bag.
  3. Lay it flat and freeze.
  4. The night before you plan to serve, remove the kit from the freezer and let it thaw over night in the fridge.
  5. Dump in the crockpot and cook per instructions and dinner is ready in a jiffy. Right before dinner time, just quickly whip up a few sides such as wild rice and a steamed vegetable and a fabulous dinner will be served.
