So last week when I was at the grocery store, they had the turkey breasts on sale for buy one get one free. That means I got two 7 pound turkey breasts for $22 or roughly, $11.00 each. Pretty good deal, right? I went ahead and picked them up and thought I’d use it to stock my freezer.
I put one turkey breast in the refrigerator on Thursday night to let it thaw. Today, Sunday afternoon, I decided to experiment with a turkey breast in the crockpot. It was super easy! I dumped one can of chicken broth (it’s all I had) and one onion (sliced pretty thick) and the turkey breast into my crockpot and let it cook on high for 5 hours. No basting and no checking required. Overall, pretty easy for a lazy day. This is what it looked like about half way through the cooking time.
When it was time for dinner, I pulled out the turkey breast, let it rest for about 10 minutes, sliced it up and whipped up a couple of quick sides – Stove Top stuffing, instant mashed potatoes, and a can of green beans. (Sorry I forgot to take a picture.) I took the drippings from the crockpot and put them into a pot on the stove, added the packet that came with the turkey breast and a little cornstarch to thicken it up.
Dinner was on the table in about 15 minutes after I started the final prep and plating. Total cost of tonight’s dinner was $6.50!
Stove Top Stuffing – $1.00
Green Beans – $1.00
Mashed Potatoes – $1.00
1/4 of the Turkey Breast – $2.75
Onion – $.75
Bonus – there is enough meat for three more meals! I used the bones to whip up some turkey noodle soup for another night this week and I plan to make turkey sour cream enchiladas and of course, sandwiches with the remaining meat.
Yummy!
I will definitely be doing the second turkey breast in the crockpot come New Year’s!
