White Chicken Chili

This is the perfect meal for a busy fall or winter day! It’s easy to assemble and dump into the crockpot. This dinner will be ready and waiting when you get home.

Picture this. It’s a cold, rainy and dreary day. After sitting in traffic, stressing about time, rushing off in two directions to Taekwondo and Swim Lessons, you can come home to an already cooked, hot crockpot meal of White Chicken Chili. Simply serve it up and dinner is on the table fast! No whining kids and no running to a fast food restaurant on the way home.

What’s even better is if you pre-assemble and freeze this meal as a crockpot kit, you literally just have to thaw it in the refrigerator overnight, get home at 4:00, dump it in the crockpot, go about your business and dinner is ready at 6:30 when you get home from your super crazy day!

To make that 4:00 dump go even faster, I get the crockpot out and put it on the counter the night before along with the dishes and serving utensils. Then literally, all I have to do is get home, and while the kids are getting ready, I take out a ziplock bag, dump it in the crockpot and turn it on. It doesn’t get much easier than that!

Another thing I love about this meal is how budget friendly it is. Assuming you have all of the main spices in your pantry, you can assemble this meal for a whopping $6.93! My prices are from the Wal-Mart online shopping app as of November 2019. The chicken is $2.67, chicken broth is $.50, the can of green chilis is $.76, northern beans are $2.00, the corn is $.50 and the sour cream is $.50. You likely already have some of these ingredients in your pantry so you might be able to whip this up for under $5.00!

So how do you make this delicious, budget friendly meal? The recipe is below:

INGREDIENTS:

1 1/2 pounds boneless skinless chicken breast
1 1/2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
2 cups chicken broth
1 small can of green chiles
2 cans great northern beans, drained and rinsed
2 cups frozen corn (can also use canned corn)
3 tablespoons butter
3 tablespoons flour
1/2 cup milk
1 teaspoon chicken base (or 1 bouillon cube), dissolved in 1/2 cup hot water
salt and pepper to taste
1/4 cup sour cream

For topping:

Shredded cheese
Tortilla strips
Sour cream

DIRECTIONS FOR COOK TODAY:

  1. Place the chicken breasts in the crockpot.
  2. Add the chili powder, cumin, garlic powder, chicken broth, green chiles, beans, and corn.
  3. Cook on low for 6-8 hours or high for 3 hours.
  4. About one hour before the chili is done, melt the butter in a medium saucepan over medium heat. Whisk in the flour to form a paste. Cook 2-3 minutes or until slightly golden. Whisking constantly to prevent lumps, slowly add the milk and the water/chicken base mixture. Continue to cook until thickened, then add the salt and pepper. Pour the mixture into the slow cooker and stir to combine. Add the sour cream and stir until combined.
  5. Pull out the chicken breasts and shred them with two forks to desired size, then return to the slow cooker.
  6. Let cook for another 30 minutes to an hour.
  7. Serve with toppings of your choice, and enjoy!

FREEZER COOKING INSTRUCTIONS

  1. Label bag – White Chicken Chile. Crockpot low 6-8 hours or high for 3 hours. About one hour before the chili is done, melt the butter in a medium saucepan over medium heat. Whisk in the flour to form a paste. Cook 2-3 minutes or until slightly golden. Whisking constantly to prevent lumps, slowly add the milk and the water/chicken base mixture. Continue to cook until thickened, then add the salt and pepper. Pour the mixture into the slow cooker and stir to combine. Add the sour cream and stir until combined.
  2. Add the chicken, chili powder, cumin, garlic powder, chicken broth, green chiles, beans, and corn to the ziplock bag. Lay flat and freeze.
  3. The night before you plan to serve, place frozen bag in the refridgerator to thaw overnight (in a bowl in case it leaks)
  4. On the day you are planning to eat, dump the bag into the crockpot and cook and serve per instructions.
  5. Enjoy!
